An Arabic and Lebanese pastry enjoyed throughout the Mid-East, Ma'amoul (or Mahmoul) starts with a delicate and subtly spiced shortbread-like dough, made slightly crunchy with farina. We press the dough in a wooden mold of elegant traditional pattern, which we fill with a variety of healthy, delectable fillings: slightly sweetened pistachios; date-walnut; dates; and dried apricot purée.
Ma'amoul pastries are rich and aromatic with a complex flavor...slightly scented with rose water. They are generously sized and easily divided for sharing.
